Get ready to cozy up with a pumpkin spice muffin and your favorite warm drink. It’s fall y’all!! These homemade pumpkin spice muffins with cream cheese frosting are made with simple ingredients; and certain to become a family favorite.
One of our family’s favorite fall treats is my homemade pumpkin cake – but this year I wanted to try something a little different: pumpkin spice muffins! I hope you enjoy these as much as we did! They are especially delicious topped with a light cream cheese frosting, but you can absolutely enjoy them without the frosting. You choose your favorite spice for this recipe: pumpkin pie or cinnamon! Makes 24 delectable fall muffins!!
Pumpkin Spice Muffin Ingredients:
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice (or cinnamon)
- 4 eggs
- 1/2 cup olive oil
- 1 teaspoon pure vanilla extract
- 1/2 cup milk
- 16 oz can pumpkin
Cream Cheese Frosting Ingredients:
- 8 ounces cream cheese – room temperature
- 1 stick butter – room temperature
- 1 teaspoon pure vanilla extra
- 4 cups powdered sugar
- 1 teaspoon pumpkin pie spice (or cinnamon) Optional
Pumpkin Spice Muffins with Cream Cheese Frosting Recipe
1: Pre-heat oven to 350 degrees.
2: In a large mixing bowl, combine the dry ingredients: flour, sugars, baking soda, salt, and spices. (I like to sift all the dry ingredients before mixing.)
3. Now add in the wet ingredients: pumpkin, eggs, and oil. Mix until the batter is thoroughly combined and smooth.
4: Add paper liners to muffin pans. Then add the batter into the liners.
5: Place pans into the pre-heated oven and bake for approximately 20 minutes. The muffins are finished baking with a toothpick comes out clean.
6: Remove pans from oven and allow to cool on cooling racks for 5 minutes. Then remove the muffins from the pans and place on the cooling racks until completely cool. (While the muffins are cooling, you can mix up the frosting.)
7: In a large mixing bowl, place cream cheese, butter, vanilla, and spices. With an electric mixer, mix until smooth. (You may need to scrape the sides of the bowl from time to time to get all the chunks mixed in.)
8: Once it is smooth, mix in the powdered sugar 1 cup at a time. Continue to mix until the cream cheese icing is completely smooth and creamy.
9: Use the cream cheese frosting to frost the pumpkin spice muffins. Serve and enjoy!! (store any leftovers in the refrigerator)
