This easy crockpot chili makes a great gluten-free meal! Serve with a side of corn-chips, and top with sour cream and sharp cheddar cheese.
I love a quick and easy crockpot meal! So nice to get it going a few hours before dinnertime, so no crazy dinner chaos. My husband loves walking into the door after a long day of work, and being greeted with the aroma of dinner simmering!
I truly appreciate how perfectly it works with one of the pre-packaged pounds of ground beef that we get in our *Butcher Box subscription too!!
Take a look at how simple it is to throw together this easy crockpot chili:

Chili Ingredients:
- 1 pound of ground beef
- 1/4 cup of diced onion
- 1/4 cup of diced bell-pepper
- 2 cans of tomato sauce
- 1 can of diced tomatoes and green chilies (drained)
- 1 can of black beans (drained and rinsed)
- 1 can of corn (optional)
- Salt and pepper to taste
Easy Crockpot Chili Recipe:

1: Cook 1 pound of ground beef with diced onion and bell-peppers. (I love cooking all meat in my Lodge cast iron pan!) Add salt and pepper. Drain and rinse if desired.

2: Add ground beef mixture to your crockpot. Then add: tomato sauce, diced tomatoes with green chilies, black beans, and corn if desired. Stir to combine.

3: Cover with crockpot lid and cook on high for 2 hours or low for 4 hours. Stirring halfway through if desired.

4: Serve while hot. We enjoy this with corn chips, sour cream, and shredded sharp cheddar cheese. Of course, you can serve any way you wish! If you like cornbread, you may want to visit my Southern Cornbread Recipe here.
