This broccoli cheddar soup recipe is one of my personal favorite comfort foods! It’s my favorite to whip up on a chilly night. It is delicious with sandwiches, salads, or with a nice piece of grilled meat! If you have browsed my recipes, you’ve probably noticed that I mostly share from scratch recipes. But every now and then I do have a favorite recipe that calls for a can of cream of mushroom soup. For some reason, nothing quite compares to it – plus it makes things simpler sometimes! So heads-up, there is a can of cream of mushroom soup in this recipe – there are some great organic ones available now! This warm, creamy, savory soup is hands down a family favorite in our home! Bonus points that it can be cooked completely in one pot! I love one pot dinners, don’t you? Who doesn’t want less dishes to wash? I hope you enjoy our favorite broccoli cheddar soup recipe!
Ingredients:
- 16 ounces frozen broccoli florets, cooked and drained
- 1/4 cup of chopped sweet onion (Vidalia is my preference)
- 1/2 stick of butter
- 10.5 ounce can of cream of mushroom soup (Pacific or Simple Truth make a great organic ones!)
- 3 cups of whole milk
- 3 tablespoons of cornstarch
- 8 ounces of blocked sharp white cheddar cheese, shredded
- Sea salt, black pepper, and paprika to taste
Broccoli Cheddar Soup Recipe:
1: In a large pot, cook 16 onces of frozen broccoli florets until tender. Drain and set aside.
2: In the same pot, melt 1/2 stick of butter on medium heat. Once melted, add 1/4 cup of diced sweet onion. Saute until tender and opaque.
3: Add in a can of cream of mushroom soup. Stir.
4: Add in 2 1/2 cups of whole milk. Stir.
5: Next, add the broccoli florets back into the pot. Then use a potato masker to mash the broccoli to desired size.
6: On medium-high heat, bring just to bubbling, then reduce heat to medium. Stir, being careful not to scald the bottom of the pan.
7: Mix 3 tablespoons of cornstarch into the remaining 1/2 cup of whole milk. Stirring constantly, slowly add into the broccoli mixture. Soup should begin to thicken.
8: Add in 8 ounces of freshly grated sharp cheddar cheese. Raise to medium-high if needed. Once cheddar is fully melted and combined, your broccoli cheddar soup is ready to serve. Enjoy!!
